I'd recommend getting a physician's statement describing her medical
condition, and why the nursing home is necesary in treating her
condition.

So, assuming her stay in a nursing home is for necessary and
prescribed for medical reasons, all of the costs including food
(but excluding telephone and cable if billed separately) would
be deductible.

Default skilled nursing home deduction

My mother-in-law recently required transfer to a skilled
nursing facility from independent living. What percent
of her costs (amounts to $90-$110k/yr) can be deducted
as a medical expense. Thanks for any information.
