The reason you can't find a place to deduct that income on
the CA 540 Resident Tax Return is that as a resident you are
subject to tax on all your income as CA defines it.

As an aside, depending upon how much you made in Hawaii, you
may have to file a nonresident Hawaii state tax return. CA
will allow a tax credit for income taxes paid to Hawaii on
the same income taxed by CA. However, the credit can not
exceed the amount of tax owed to CA.

As a CA resident, all income you earn is taxable in CA
regardless of where you earn it. CA will give you a credit
against your CA liability for taxes paid to other states.

I am a California resident but I worked on two projects
out-of-state, one in Florida and one in Hawaii.

Can I deduct this income from my California Income, and not
pay taxes to California? If so, where can I make that
adjustment?
