If you left the corporation in California with a registered
agent there, and, if the corporation files necessary state
tax returns, etc, AND if you then register that corporation
with North Carolina as a foreign corporation, ... whew....

Both

What I would do is get rid of California corporation and
form a new NC corporation which continues the old
corporation, making necessary entries in the corporate
minutes as a resolution moving the body. You can then use
same IRS EIN. And since you'll have NC employee(s), in
either case, you'll need to register with Raleigh.

I have a S-corp in CA. Recently I moved to North Carolina
and become a NC resident and will be providing on-site
consultancy for a client in NC. I have following questions.

1) Can I use my CA corporation to provide consultancy to NC
client?
2) If yes, what legal formality I need to do?
3) Which State's taxes would I pay as employee of CA
corporation but NC resident. NC or CA?
