Many states have a Secretary of State web site that allows
you to quickly, easily and cheaply create a new entity and
provides VERY BASIC articles of incorporation/organization.
for example, if you're in New Jersey, the site is:
http://www.state.nj.us/njbgs/index.html this provides links
and information about starting a business, forming a new
entity, etc.

Can you ask another 501(c)(7) for a copy of their papers?
Or get a copy from your Secrtary of State?

They're usually called articles of organization or articles
of incorporation. A good starting point might be IRS
Publication 557:

You also might consider hiring an attorney or accountant to
help you out.

It's probably in your state's business statutes. There are
IRS requirements, but those can, for the most part, be in
articles of organization, bylaws, trust agreement or any
other foundational documents of the organization.
