"all premiums that exceed the 7.5% of my AGI" isn't correct. Your medical deduction is your total allowed medical expense, including the premiums (if allowed), less 7.5% of AGI. However, only the portion that exceeds 7.5% of your AGI is deductible, so unless you had significant expenses that weren't covered by your insurance you won't be able to take a deduction.
