I make a Withdraw from the appropriate account and assign it to category
Loans: Family, Friends. When I am paid back .. I make a Deposit to
appropriate account and assign it to the same category. The sum total for
that category 'should' be zero over time.

The new account wizzard does it all for you.

While setting up a new account, select loan, and then it asks whether
you are loaning money or receivbing money you can then distinquish.
