You don't provide much information as to how you are trying to do this and
why Money isn't letting you.

The basic drill on "interest only" is to setup a Loan Account and specify
the entire principal amount under the balloon payment amount. So, you
specify the I payment and the Principal (P) balance and the balloon payment
(=P) and let Money finger out the interest rate.
