You could use the tools-> Find&Replace option to speed this up....

If you had autocomplete on when you entered the transactions, it would fill
in the category when it recognized the payee as previously being assigned
that category. Since you've already entered them in, I would recommend
using Tools, Find and Replace to find all transactions for a specific payee,
then add the category.

Default Entering Categories

I'm a new user of Money. I loaded several months worth of
transactions into Money. I'm entering categories for the
transactions, but, I don't want to have to enter each and every single
one of hundreds of transactions. Shouldn't it the categories
automatically be applied to like named transactions. In other words,
if i enter a category of "Food - groceries" for a transaction for
Safeway, shouldn't all of the Safeway transactions pick up the same
category?
