Turn off the forms entry thing. If you enter the transactions directly into
the register without using the forms at the bottom of the screen, then you
can easily change an existing transaction to a category instead of a
transfer.

No, but to avoid the problem in the future, enter a transfer as a
withdrawal, then select "Transfer: [Other account]" as the category to
perform the transfer. You can change it back to a regular category at a
later date, if you change your mind.

Is it possible to edit the transfer and to write something
like "Category: Property" inside the TO box?

Quickest way is to enter a new transaction and remove the old one.....
