Normally one creates a Loan Account--this is a liability and its balance
reflects the current balance on the loan) and uses Loan Payment special
category transactions to pay the loan. A Loan Payment is a special hybrid of
Transfer (the principal--reduces the balance of the loan liability account)
and a calculated interest expense component. The calculations of Loan
Payment are based on data you supply when defining the Loan Account--things
like term interest rate, initial balance, etc.

Look up Loan in help. See how afar you get. Come back here with more
questions.
