Ken - depending on which report you're using, there may be a
categories tab under chart options to select which categories are
included or not.

One thing you might consider - I've found that this works quite well
for reimbursable business expenses - is to set up an asset account for
your expenses to be reimbursed. So, when you incur an expense that
you'll be reibursed for, you show it as a transfer to the asset
account. When you get reimbursed, you can show it as a transfer from
the asset account. It's a good way to keep track of what you're due
to receive back. You can then run the report, and not include these
transfers.

Default filtering spending by category pie chart

Is there a way to filter out a category in the spending by category pie
chart? For example, I would like the reimbursed job expenses to not show up
on the pie chart, since those expenses do not really indicate my spending
habits/distribution.
