Create an appropriately named Income category such as "Gift
Received", but indicate it is non-taxable when Money asks about it.

It's income-- but not taxable income.

I received a gift in the form of a check. In my check register in Money
Deluxe 2007, how should I categorize it as it's neither income nor an expense?
