Microsoft telephone support rep for Money told me there was no option.

Agree! I've been "suffering" with the same problem.

I just upgraded from 2001 to 2006. I enter transactions manually and use online updates. Money matches the transactions well, as it always has. However, it now overwrites the date I manually entered and replaces it with the bank's date. Even if I go as far as to delete the date in the Edit window and re-enter before clicking Accept, it still overwrites it. In order to enter the date I actually spent the money, I am forced to re-edit the cleared transaction and re-enter the date. It respects every other data element from the manually entered transaction, except the date. I want to know the date I spent the money, not the day the bank posted it.
