Money will learn how you categorize previous transactions for the same
payee. Out-of-the-box (or with a new file), the automagic characterizations
based on keywords in Payees. "Bob's Burgers" will likely hit on "burgers" as
Dining Out (or Foodining Out for us traditionalists). "Bob's" will get it
nowhere. But if you've already entered a Dining Out transaction at "Bob's",
the next time you enter a transaction to "Bob's", Money will guess Dining
Out. Now, if you also buy gas at a different "Bob's", it'll think that's
Dining Out as well.

The keyword list isn't customizable.
